Onion Tarte Tatin, Coated in Love

  • 3 red onions,
  • 2 tablespoons brown sugar
  • 2 tablespoons butter
  • 1 dl  water
  • 1 dl balsamic vinegar
  • 1 tablespoon tarragon
  • 3 tablespoons fiery berry
  • Pepper A sprinkle of love
  • Puff pastry (you can make it yourself or buy it, but I recommend making it yourself, you lazy dog)
  1. Preheat the oven to 200 degrees Celsius.
  2. Take a pan and brown the onions on each side. Remove them from the pan and cover the pan with a lid, so the steam stays in the pan. This is not to pamper them but to cook them properly.
  3. Add balsamic vinegar to the pan, followed by water, sugar, and pepper.
  4. Cook the mixture until it is reduced by half, and then add butter. Be careful not to let it boil.
  5. When the glaze is ready, pour it into the bottom of the desired dish in which you will make your onion tarte tatin. Arrange the onions in the dish according to your preference; there are no strict rules here.
  6. Cover the dish with a layer of puff pastry and prick small holes in the dough with a fork (this helps maintain the shape, and the dough should slightly cover the onions).
  7. Place the entire pan in the oven and bake for about 25 minutes until the surface is golden and fine.
  8. Turn the tart onto a plate so the onions are facing upward.
  9. Serve your masterpiece with a feta cheese cream (and don't worry; this may not be the most beautiful masterpiece you've ever made,   but remember that you weren't the most beautiful when you were born, but someone still loves you
